When summer comes to successful entertaining, I think it’s as much to do with the ambience you create as it is to do with the food you serve, so I love our feature on the art of the long table (page 16). I’m low-key obsessed with outdoor lighting and have already ordered some LED pillar lights to bring the vibes this summer.
I would cook over live fire at any time of the year, so I’m always keen to know what barbecue kit is knocking it out the park. The GHI’s top-rated barbie scored a pretty impressive 96/100 in tests this year (page 127) and I’m wondering how I can convince my husband we need an upgrade. The GHI has also put pizza ovens through the ringer, if you’re in the market for one of those (page 95). But of course, you’re here for the recipes, right? Whether it’s innovative barbecue ideas, big sharing salads to plonk in the middle of the table, cute picnic recipes that travel well or sumptuous desserts laden with juicy summer fruit, you’ll find all the inspiration you need. Top of my make list this year are our retro prawn cocktail burgers (page 120), the smokey pulled pork with cola barbecue sauce which is going to be great piled into buns (page 104), and of course our beautiful cover recipe (page 130)!
If you’re in any way nervous around pastry, this style of freeform pie is honestly one of the most forgiving. Just roll your pastry into a very rough circle, pile in fruit and flip the pastry edges over to seal in all that fruity goodness.
We’ve used peaches because this is legitimately the only time of year that they taste good, but feel free to toss in any fruit you have to hand.
Plums, cherries (pitted first please!), blueberries… the choice is yours. The homemade ricotta ice cream is great if you’re feeling a bit extra (me, always) but by all means cheat with a shop-bought sub.
