Traditional Norwegian cuisine is largely based on the meats, vegetables and fruits available most readily on the coastlines of Norway, and in its wilderness areas and mountains. Chefs in the country use more fish and game than that used by others in Europe. They also count on using preserved ingredients, since they have very long winters.
The cuisine of modern Norway, though, does show more signs of its globalization, including even dishes like pasta, tacos and pizza. Even though staple foods like cod and Norwegian meatballs are readily found, urban restaurants offer the same other types of dishes you might find in any city in Western Europe. We will concentrate on the traditional Norwegian dishes in this cookbook.
Most Norwegians consume three to four meals per day, with a typically cold breakfast, a packed lunch, and a larger, hot dinner with families at home. Some people also eat a cold meal later in the evening.
